This recipe can also be varied to make “dark chocolate” fudge by using ¼ cup regular cocoa and ¼ cup “ special dark” cocoa instead of the ½ cup regular cocoa or to make a peanut butter version by substituting peanut butter for part of the butter. If you want nuts, add them in, blend, pour into your greased pan, and refrigerate until firm (see below for the recipe). After microwaving, then add the vanilla and blend with the stick blender until smooth. You simply combine the powdered sugar and cocoa in a microwave-safe bowl, add the butter and milk into a “well” you create in the dry ingredients, and microwave for two minutes. But, it’s very simple to make and the ingredients are just powdered sugar, cocoa, butter, milk, vanilla, and nuts (if you want nuts in your fudge). To make this fudge, you do need a microwave oven and a stick blender. Since we keep Nigerian Dwarf goats, everyone wants to know whether we make “goat milk fudge” anyway, so we make sure to have this delicious fudge around. For all those extra folks you’d like to send some Christmas cheer. We particularly like making this around Christmas time so that we always have a small homemade gift available. I found the recipe because I was looking for goat milk recipes, and found it on a goat keeping forum. I swear this is the easiest fudge recipe I’ve ever made – it’s cooked in the microwave. Although I use goat milk (learn what goat milk tastes like here: What Does Goat Milk Taste Like Anyway), whole cow milk can be used instead.
